饮食民俗是物质生活民俗的重要方面，是区域饮食文化的外化表现。火锅作为重庆地区最具特色和代表性的饮食民俗，其产生和发展是地理因素、历史因素和地方饮食文化共同作用的结果，与此同时重庆火锅也蕴含着丰富的饮食文化内涵。 本文重点对重庆老式火锅店和新式火锅店进行了调查，以地理民俗的研究视角，着重分析了传统重庆火锅的地理环境和地方特色，新式重庆火锅的民俗传承和文化发展，分析当代饮食民俗的环境变化对重庆火锅发展的影响。 本文研究发现，重庆火锅在起源和传承过程中都具有鲜明的地方特色。与此同时，重庆火锅在对当代饮食民俗日常需求和市场需求的不同适应过程中，产生了守旧与创新两种发展方向，并存在着向两种方向持续发展的趋势。

The folk of diets is one of the important folk of materialistic life. Chongqing Hotpot, as the most characteristic and representative dietary folklore in Chongqing, is the result of combined influence of geographical, historical elements and local dietary culture, and it also contains rich food culture. This paper mainly conducts a survey about old-fashioned hotpot restaurants and new ones in Chongqing, concentrates on analyzing geographical environment and local characteristic of traditional hotpot in Chongqing, custom inheritance and cultural development of new-style hotpot of Chongqing, to analyze the influence of environment change of modern dietary folklore on development of hotpot in Chongqing. We can see from the paper that Chongqing hotpot both in the course of origin and passing down has distinct local character. Meanwhile, Chongqing hotpot emerges two routes of development: conservative and creative in the adaptive process of daily requirement and market requirement of modern dietary custom, will trend to progress toward these two directions.
