美食纪录片在中国越来越受欢迎。中国观众不仅在电视上观看国内出品的美食纪录片,也在网上浏览外国制作的同类题材纪录片。但纪录片的翻译仍处在翻译研究的边缘位置,与其广大受众基础与日益增长的需求不符。大量研究从语言特征,文化影响,甚至是影视专业的角度剖析了影视翻译,而纪录片作为电影的原型却没有得到充分的重视。本篇论文旨在梳理多元系统理论的发展,结合该理论提出的译文充分性和可接受性特征,分析美食纪录片巴黎私厨的字幕翻译。 由多元系统理论可知,国内的美食纪录片首先吸引了观众的眼球,则译制的外国美食纪录片只能占据次等地位。因此,译制脚本时应更注重可接受性而不是充分性。本文分析了《巴黎私厨》前三集的字幕翻译,发现字幕翻译者采用了汉语中的俗语和口语化的语言,提升了译文的可接受性。但有的部分没能做到优先考虑可接受性,影响了原文意思的传达。分析结果表明俗语的运用以及翻译文本与图像间的一致性增强了字幕译文的可接受性,创新的菜名翻译提升了译文的充分性。

With the popularity of food documentaries escalating in China, Chinese audiences not only watch the domestic productions on TV but also enjoy those about foreign food online. In contrast to the increasing popularity, documentary translation is still in a marginalized position in the translation studies. While a huge amount of research contributed to film translation from the perspective of linguistic features, cultural influence, and even professional film studies, documentaries, as the origin of film, do not attract much attention. The aim of this paper was therefore to review the development of Polysystem theory that takes the social, cultural, and political environment of target language into consideration and to analyze subtitles of The Little Kitchen: Cooking with Rachel Khoo, a food documentary, under the standards of adequacy and acceptability proposed by Polysystem theory. According to Polysystem theory, translated foreign food documentaries are in secondary position because domestic ones arose the attention from the audience first. Therefore, the translation of scripts should stress acceptability more than adequacy. This paper analyzes the subtitle translation in the first three episodes of The Little Paris Kitchen: Cooking with Rachel Khoo and finds out that subtitlers use Chinese idioms and colloquial languages to assist the acceptability of translation while some translations need to be acceptable instead of adequate in order to deliver the messages in source texts. By doing so, this paper concludes that the use of idioms and the consistency between translation and images improve the acceptability of subtitles while the innovative translation of names of dishes increases their adequacy of the source language.
