本文是关于北京牛街回民饮食习俗研究，主要使用民俗学理论，运用本人的第一手调查资料，参照使用地方志文献，以及其他相关文献;参照使用新疆家乡回族饮食民俗记载资料，进行研究。回族作为北京市聚居少数民族之一，历史悠久，虽然人口不多，饮食习俗中保留着本民族的独特特点，不仅受到伊斯兰教的饮食规则的影响，也受到北京其他兄弟民族的影响。所以回族人的饮食习俗跟阿拉伯人的饮食习俗不同，也不像汉民的饮食习俗，而是一直保留着浓厚的民族特色。 本文共分为三部分。首有绪论。接着是正文，正文分三部分:第一部分是回族饮食民俗的历史记载与特征描述;这部分主要介绍北京牛街和新疆家乡回族饮食的历史记载和这两个地方的饮食民俗作为比较。第二部分是北京牛街回族饮食加工技术传承调查;这部分主要用北京牛街回民的访谈资料作样本探讨北京牛街回族加工技术的传承现象。第三部分是回族饮食加工技术的地方传承与多元变迁;这部分主要以北京牛街和新疆家乡饮食加工技术的变迁和比较。最后部分是结论，结论包括文中观点的总结和存在的不足。
