“民以食为天”是一句中国古代的谚语,强调了食物在人民生活中的核心地位,而这一特点,在广东地区更为甚。广东人的饮食习惯深受其地理、气候和文化的影响,拥有着一致对食材选择新鲜、原汁原味和营养均衡的追求,但各地餐饮美食又在地域上存在分异,与广府文化客家文化等相结合,形成了独特且丰富多样的广东饮食文化。 就餐饮美食空间而言,目前国内外大多偏向于选择主城区或单个城市来探究餐饮点的布局结构,结合人群消费偏好和社会经济因素进行关联讨论,鲜少以具有同宗文化渊源的相邻地域来进行考虑其空间分布特点的研究。因此本次研究以珠江口西岸的餐饮美食作为研究对象,以广州佛山中山珠海四城作为研究范围,探究区域餐饮美食空间集聚特征。 通过使用莫兰指数、核密度分析、标准差椭圆和平均最近邻四种空间分析方法对餐饮美食设施POI数据进行分析,得出珠江口西岸餐饮美食空间集聚特征:餐饮设施具有显著的空间正相关性;在空间分布上呈现不均衡的发展,主要集聚在城市接邻边界处,集聚核与城市发展中心位置重合;餐饮设施的分布具有明显的方向性,沿长轴所在的北偏西方向南北向延伸分布;餐饮设施集聚程度排序为中国菜>小吃快餐>蛋糕甜品店>其它>外国菜>咖啡=茶座。 针对珠江口西岸餐饮设施呈现的空间集聚特征,从区域经济、交通建设条件和地区文化三个角度进行影响因素分析,得出它们具有高度相关性,有助于更好地促进大湾区餐饮设施规划布局。 |

Guangdong people's eating habits are deeply influenced by their geography, climate and culture, with a consistent pursuit of fresh ingredients, original flavours and balanced nutrition. However, there are regional differences in catering cuisines across the region, and the combination of Cantonese and Hakka cultures has resulted in a unique and richly varied Guangdong food culture. As far as the space of catering cuisine is concerned, at present, most of the domestic and foreign countries prefer to choose the main urban area or a single city to explore the layout structure of catering spots, and discuss the correlation with the consumption preference of the population and socio-economic factors, but rarely consider the spatial distribution characteristics of neighbouring regions with the same cultural origin. Therefore, this study takes the catering cuisine on the west bank of the Pearl River Estuary as the research object, and takes the four cities of GuangZhou, Foshan, Zhongshan and Zhuhai as the research scope to explore the spatial agglomeration characteristics of regional catering cuisine. By using four spatial analysis methods, namely, Moran index, kernel density analysis, standard deviation ellipse and average nearest neighbour, to analyse the POI data of catering facilities, it is concluded that the spatial agglomeration characteristics of catering and food on the west bank of the Pearl River Estuary are: catering facilities have a significant positive spatial correlation; they show an uneven development in their spatial distribution, and are mainly clustered in the adjacent boundaries of the cities, with the nucleus of the agglomeration coinciding with the location of the urban development centre; the distribution of catering facilities has a significant directionality; and the distribution of catering facilities is obviously directional, extending north-south along the north-west direction where the long axis is located; catering facilities are ranked in descending order of concentration as Chinese cuisine, snacks, cake and dessert shops, others, foreign cuisine, and coffee and tea shops are tied for the smallest. In view of the spatial agglomeration characteristics of catering facilities in the West Bank of the Pearl River Estuary, the influencing factors are analysed from the perspectives of regional economy, traffic construction conditions and regional culture, and it is concluded that they are highly correlated, which can help to better promote the planning and layout of catering facilities in the Greater Bay Area. |
