本文主要介绍了在众多的果蔬汁研究方法当中的介电谱检测技术和流变特性研究。分别选取了6种水果(鸭梨、皇冠梨、丰水梨、菠萝、中华猕猴桃、黄色奇异果)和11种蔬菜(土豆、红薯、紫薯、南瓜、番茄、芹菜、莴笋、青瓜、苦瓜、白萝卜、胡萝卜),将其用破壁机榨取汁液以后,对每种样品的离心汁、过滤汁、浆液进行了介电特性和流变特性的研究。研究发现果蔬汁的离心汁、过滤汁的介电谱曲线几乎是重叠的,只有浆液的能够与前两者区别出;在低频区域,果蔬汁、浆液均出现了与电极极化有关的弛豫;电导率谱图中各种水果蔬菜的曲线相差较大,主要与其物质本身特性有关,水果中黄色奇异果的电导率最高,蔬菜中芹菜的电导率最高;复电导率谱图中均有两个峰,第一个峰与电极极化有关,第二个峰与测量误差有关,目前世界介电谱研究界都没有办法避免这两项,还待进一步研究揭示其中原因。果蔬汁的离心汁、过滤汁的剪切应力随剪切速率变化的流变曲线拟合得很好,相关系数接近1,从拟合结果来看,均为宾汉塑性流体。
外文摘要:
The paper mainly introduces the research of dielectric spectroscopy and rheological properties among many methods of fruits and vegetable juice research. We choose 6 kinds of fruits ( pear , crown pear , Fengshui Pear, pineapple, kiwi, yellow kiwi) and 11 kinds of vegetables( potatoes , sweet potatoes, purple sweet potato ,pumpkin, tomato, celery, lettuce, cucumber, bitter gourd ,white radish , carrot). After the extracting the juice with an electric extractor , the dielectric properties and rheological properties of each sample, including centrifugal juice ,filter juice and slurry, were studied. It has been found that the dielectric curve of the centrifugal juice and the filter jucie is almost overlapped , and only the size of the slurry can be distinguished from the former. In low frequency region, the relaxation related to electrode polarization appeared in both fruit and vegetable juice and slurry. In the conductivity spectrum, the curves of various fruits and vegetables vary greatly, which is mainly related to the characteristics of the material itself. The highest conductivity of yellow kiwifruit is found in fruits, and the conductivity of celery in vegetables is the highest. Complex conductivity spectrum has two peaks, the first peak is related to electrode polarization, and the second peak is related to measurement error. Current world dielectric spectroscopy research community have no way to avoid these two, further study revealed the reasons. Centrifugal juice and filtered juice rheological curve fitting of shear stress with the change of the shear rate is very good, the correlation coefficient is close to 1, from the fitting results, all belong to Bingham plastic fluid .
