幼儿的身心健康需要以科学的饮食与合理的营养为基础。幼儿园饮食与营养教育是幼儿园教育的重要组成部分,承担着提高幼儿的营养认知水平、培养幼儿良好饮食行为习惯的重要任务。但在当前幼儿园教育过程中,幼儿园饮食与营养教育并没有发挥其真正的作用,存在缺少专门的教育活动、进餐过程中教师过于强调进餐纪律等问题。为全面了解幼儿园饮食与营养教育的现状,分析在实际教育过程中存在的问题,从而提出具有实用性的教育建议。本研究以银川市六所民办幼儿园的小中大班为研究对象,通过问卷调查法、观察法和访谈法对以下几方面进行了调查:幼儿的营养认知和饮食行为习惯;家长的喂养行为及其对营养教育的态度和诉求;教师对营养教育的态度;幼儿园饮食与营养教育活动设计和实施的现状。本研究主要得出以下结论:(1)幼儿随着年龄的增长其营养认知水平会显著提高,幼儿普遍存在挑食、边吃边玩等不良饮食习惯,幼儿的进餐独立性随年龄的增长而增强。(2)家长的喂养态度比较积极。家长普遍认同学习喂养知识的重要性和喂养对健康的重要意义,并愿意接受喂养方面的相关教育、改善自己的喂养行为。大部分家长希望可以学习更多营养方面的知识和科学的喂养方法。(3)大部分教师听说过幼儿饮食与营养教育但并不了解其具体内容,并且认为自己在营养教育方面所做的工作很少或还不够。(4)教师组织和实施幼儿园饮食与营养教育活动的状况:1、教师对幼儿园饮食与营养教育的重视程度不够;2、教学目标内涵过大,缺乏可操作性;3、教学内容之间的关联性较差;4、教学方法相对单一,缺乏专门的饮食与营养教育活动;5、幼儿园进餐环境不理想,教师较多关注进餐纪律和进餐速度;6、大部分教师没有参加过与营养教育相关的教研和培训活动。最后笔者针对当前幼儿园饮食与营养教育中存在的问题,提出了相应的改进建议。

Preschool children are in a critical period of growth and development.Nutrition is the material basis to ensure children physical and mental health.As an important part of the kindergarten education, the nutrition education is responsible for the important task of improving children’s nutrition cognition. However, in kindergarten education process, nutrition education did not play its due role.This paper invested the nutrition education in six private kindergartens of Yinchuan in order to get familiar with the recent conditions and find the problems existing in this course of educating and offer some suggestion for improving the development of nuteition education in kindergarten. This paper mainly uses the methods of questionnaire, observation and interview to survey the following aspects: children’s nutrition cognition and eating behavior; parents’ feeding behavior and their attitude and demand for nutrition edueation; teacher’s attitude towards nutrition edueation; a current situation of teachers design and implement nutrition educational activities.The outcomes include:(1) Children’s cognition level on nutrition rises as their age grows. Children have the universal problematic eating behaviors, including choosy in food and not be able to concentrate on eating. Children’s independent ability rises as their age grows.(2) Parents have a positive attitude. Parents are generally recoginize the importance of learning feeding knowledge and feeding on health, and they are willing to accept the education of feeding, to improve their feeding behavior.And parents hope to learn more about the knowledge of nutrition and scientific method of feeding.(3) Most teachers doesn’t know the specific content of nutrition education and think they need to do more works in nutrition education.(4) The status of organization implementation of nutrition educational activities: 1.Most teachers paid no attention to nutrition education. 2. Over-expanding connotation and the lack of operability about teaching objectives. 3. Teaching contents are short of relevance. 4. The teaching method is relatively simple. 5. The nutrition educational environment is not ideal. 6. Most teachers didn’t attend the teaching and research activities.Based the findings, the author gives some suggestions for improvement the quality of nutrition education.
